Serves 4
  • 1 tbsp honey
  • 1 tbsp pecans
  • 1 pomegranate seeds
  • 4 carrots large or 16 small

Instructions

  1. Preheat the oven to 180 °C / 350 °F
  2. If using large carrots, cut into batons, smaller ones can be roasted whole.
  3. Parboil your carrots for about two minutes.
  4. Coat the carrots in honey and a small amount of water.
  5. Roast for 30-40 minutes.
  6. When the carrots are roasted, toss through the pomegranate seeds and pecans.

If you don’t eat honey, you could try using maple syrup instead.
