Serves 4
- 1 large red pepper chopped
- 1 large onion chopped
- 1 medium celery stalk chopped
- 230 g lentils green or brown
- 230 ml vegetable stock
- 2 tbsp tomato puree
- 1 tsp thyme
- 1 splash olive or flaxseed oil
Instructions
- Steam the red pepper, onion and celery in a little water.
- Stir in the lentils and add the vegetable stock along with the tomato puree and herbs.
- Simmer, covered for 30-40 minutes.
- Puree and season.
- Leave to cool before serving.
- You can add olive or flaxseed oil to taste.
