Ingredients List
Serves 4
- 1 large red pepper (chopped)
- 1 large onion (chopped)
- 1 medium celery stalk (chopped)
- 8 oz lentils (green or brown)
- 0.75 cup vegetable stock
- 2 tbsp tomato puree
- 0.5 tsp thyme
- 1 splash olive or flaxseed oil
Instructions
- Steam red pepper, onion and celery in a little water.
- Stir in lentils and add 3/4 cup vegetable stock, tomato puree and herbs.
- Simmer covered 30-40 minutes.
- Puree and season.
- Cool before serving.
- Add olive or flaxseed oil to taste.
