Red Pepper Lentil Pate

Easy red pepper, tomato, herb and lentil pate to eat on a crusty bread or cracker.

Serves 4
  • 1 large red pepper chopped
  • 1 large onion chopped
  • 1 medium celery stalk chopped
  • 230 g lentils green or brown
  • 230 ml vegetable stock
  • 2 tbsp tomato puree
  • 1 tsp thyme
  • 1 splash olive or flaxseed oil

Instructions

  1. Steam the red pepper, onion and celery in a little water.
  2. Stir in the lentils and add the vegetable stock along with the tomato puree and herbs.
  3. Simmer, covered for 30-40 minutes.
  4. Puree and season.
  5. Leave to cool before serving.
  6. You can add olive or flaxseed oil to taste.
