- 350 g potatoes
- salad leaves bag of
- 200 g mackerel
- 1 apples diced
- 1 tbsp capers
- chopped nuts of choice handful
- 100 g non-dairy yoghurt
- 1 tsp horseradish
- 1 lemon juice of
Instructions
- Boil the potatoes until soft, drain and leave to one side
- Chop the mackerel into pieces and split between two plates
- Dice the apple and add to the plates
- Sprinkle over the caper and chopped nuts
- Add the potatoes
- Make the dressing by combining the yogurt, horseradish and lemon juice.
- Drizzle over your salad and enjoy!
