Sweet Potato Fruit Cake

This twist on a traditional fruit cake is tasty enough for a wedding celebration, or simply to enjoy with a cup of tea! This recipe is from our 2024 Ammerdown Retreat.

Ingredients list

 

Serves 10
  • ½ tsp of bicarb of soda
  • 150 g sultanas
  • 2 medium carrots grated
  • 2 tsp of salt
  • 500 g cooked sweet potato mashed
  • 350 ml oat or almond milk
  • 80 ml olive oil
  • 2 tsp of cider vinegar
  • 300 g sugar
  • 300 g ground almonds
  • 300 g of gluten-free self-rising flour

Instructions

  1. Put all of the ingredients except for the sultanas and grated carrot into a food processor.
  2. Blend until smooth.
  3. Mix in by hand the sultanas and grated carrot.
  4. Pour the mixture into a large lined baking tray.
  5. Bake at 160°C for 45-55 minutes.
