Ingredients List



  1. Dry fry the onion in a non stick pan for a couple of minutes
  2. Add a little water, garlic and spices to form a paste with the onion and fry for 1 minute
  3. Add the butternut squash (or sweet potato) and pepper. Pour in enough water to cover the veg and add the stock cube. 
  4. Once soft, add the chopped tomatoes and passata, courgette and dried fruit
  5. Simmer for 20 minutes while you make some couscous, polenta (gf) or rice
  6. Add flaked almonds to the tagine and stir through
  7. Serve with more flaked almonds, fresh coriander and a spoonful of yogurt
