Units:
- 1 quart vegetable broth (low sodium )
- 1 quart water
- 1 cup pearl barley (uncooked)
- 3 carrots (large size, chopped)
- 3 stalks celery (chopped)
- 1 can diced tomatoes with juice
- 1 courgette (medium size)
- 1 squash (chopped)
- 1 can chickpeas drained and rinsed
- 1 onion (chopped)
- 1 bay leaf
- 1 tsp garlic powder
- 1/2 tsp black pepper (ground)
- 1 tsp parsley (dried)
- 1-2 tsp curry powder
- 1 tsp turmeric
- 1 tsp paprika
- 1 tbsp soy sauce (low sodium)

Add all the ingredients to a soup pot, bring to a boil, then cover and reduce to a simmer over medium-low heat for 40-45 minutes.

The stew will be thick. You may adjust by adding more broth or less barley if desired. Enjoy!
