- 6 medium potatoes (waxy potatoes work best)
- 3 medium spring onions
- 1 tbsp capers (small rinsed)
- 2 tbsp dill (chopped, or parsley, or chives)
- 3 tbsp extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 tsp dijon mustard

- Cut potatoes into small piecesĀ
- Cook potatoes until tender but firm, about 20 mins.
- Finely chop spring onions.
- Combine dressing ingredients and add capers, spring onions and chopped herbs and toss.
- Drain the potatoes and then slice
- Toss them carefully in the dressing while still warm and serve.
Add sea salt and ground pepper to taste.
