- 400 g rolled oats
- 50 g roughly chopped almonds
- 50 g roughly chopped hazelnuts
- 50 g sunflower seeds
- 50 g pumpkin seeds
- 1 ½ tsp ground cinnamon
- a good pinch of salt
- 175 apple sauce , unsweetened
- 2 tbsp extra virgin olive oil , mild flavoured
- 2 tbsp maple syrup or honey
- 50 g dried cranberries
- 50 g sultanas
Instructions
- Pre-heat the oven to 150 C / 300 F / 130 C Fan
- In a large bowl, mix together the oats, nuts, seeds, cinnamon and salt.
- In a separate bowl combine the apple sauce, oil and maple syrup or honey, then mix well into the dry ingredients.
- Spread onto two baking sheets lined with baking parchment and bake for 25-30 minutes or until golden brown, stirring half way through.
- Leave to cool completely and then add the dried fruit.
- Store in an airtight jar.
Notes
- Serve with plant-based milk, or sprinkled over plant-based yoghurt and fresh fruit or berries.
- Experiment with different combinations of your favourite nuts, seeds and dried fruit.
- Make your own apple sauce, or for convenience you could use ready-made unsweetened apple compote.
- Stored in an airtight jar, the granola will keep for up to one month.
