Apple and Cinnamon Granola

A healthy version of a popular breakfast cereal.

Ingredients List

 

Serves 16
  • 400 g rolled oats
  • 50 g roughly chopped almonds
  • 50 g roughly chopped hazelnuts
  • 50 g sunflower seeds
  • 50 g pumpkin seeds
  • 1 ½ tsp ground cinnamon
  • a good pinch of salt
  • 175 apple sauce , unsweetened
  • 2 tbsp extra virgin olive oil , mild flavoured
  • 2 tbsp maple syrup or honey
  • 50 g dried cranberries
  • 50 g sultanas

Instructions

  1. Pre-heat the oven to 150 C / 300 F / 130 C Fan
  2. In a large bowl, mix together the oats, nuts, seeds, cinnamon and salt.
  3. In a separate bowl combine the apple sauce, oil and maple syrup or honey, then mix well into the dry ingredients.
  4. Spread onto two baking sheets lined with baking parchment and bake for 25-30 minutes or until golden brown, stirring half way through.
  5. Leave to cool completely and then add the dried fruit.
  6. Store in an airtight jar.

Notes

  1. Serve with plant-based milk, or sprinkled over plant-based yoghurt and fresh fruit or berries.
  2. Experiment with different combinations of your favourite nuts, seeds and dried fruit.
  3. Make your own apple sauce, or for convenience you could use ready-made unsweetened apple compote.
  4. Stored in an airtight jar, the granola will keep for up to one month.
