Asparagus and Tofu Lime Noodles

By coating the tofu in spicy MSG-free sriracha, sweet agave, soy sauce and a sprinkle of sesame seeds this noodle dish is super tasty and so easy to make!

Ingredients List

 

Serves 1
  • 280 g firm tofu
  • 1 tbsp sesame oil
  • 1 spring onion
  • 2 tbsp sriracha (make sure to use an MSG-free sriracha)
  • 1 lime
  • 250 g wholewheat noodles
  • 4 tbsp soy sauce
  • sesame seeds
  • 25 g maple or agave syrup
  • 125 g asparagus

Instructions

  1. Prepare the asparagus by cutting in half and removing any woody stems
  2. Mix the Sriracha, 2 tbsp of soy sauce and the agave syrup in a bowl.
  3. Cook noodles for 3 minutes in boiling water 
  4. Cut tofu into chunks and then coat in the mixture, lay in a parchment- lined baking tray and bake at 200C for 25-30 mins
  5. Add the asparagus to the noodles for 3 minutes 
  6. Drain and then add the juice of half a lime, sesame oil and 2 tbsp soy sauce
  7. Arrange noodles with tofu 
  8. Top with sesame seeds and sliced spring onion 

Replace asparagus with any veg that’s in season.

Make sure to use an MSG-free sriracha.
