Avocado and Orange Salad with Mint Dressing

A fresh citrus salad to eat with fish or for a lighter meal a leafy green salad. Recipe kindly provided by Kaye.

Ingredients List

Serves 3
  • 2 large avocados (firm, ripe to touch)
  • 1 medium orange
  • 0.5 cups extra virgin olive oil
  • 1 tbsp mint (fresh, chopped)
  • 2 tsp honey
  • 1 tsp orange rind (grated)
  • 1 tbsp lemon juice
  • 2 tbsp orange juice
  • 1 pinch salt and pepper (to taste)

Instructions

  1. Put all the dressing ingredients in a jar with a lid and shake well to mix.
  2. Season to taste with salt and pepper.
  3. Peel the orange and cut or break into segments.
  4. Put the orange and the dressing into a bowl.
  5. Chill for at least half an hour,
  6. Just before serving, peel the avocados and slice into the dressing.
  7. Mix gently.
  8. Ensure the avocado is coated in the dressing.
  9. Adjust seasoning if you need to and serve.

You can make the salad (up to stage 5) hours ahead, even the day before if you wish.
