Baked Fish with Banana

An unusual sweet and spicy fish recipe, that makes a delicious, healthy, oil-free family meal served with wholemeal rice or couscous. Shared by Gillian.

Ingredients List

Serves 4
  • 2 oranges
  • 1 red onion
  • 2 garlic cloves
  • 2 chillies , (or to taste)
  • 1 banana
  • 4 white fish fillets , (firm, e.g. cod)
  • sea salt
  • black pepper

Instructions

  1. Zest and juice the oranges. Finely slice the onion and garlic.  Deseed the chillies and finely slice. Cut the bananas into rounds.
  2. Preheat the oven to 200 C / 400 F / 180 Fan.
  3. Place the fish fillets onto a shallow, non-stick baking tray and season with salt. 
  4. Top with the banana, onion, garlic and chillies. Sprinkle over the orange zest and add the orange juice. 
  5. Cover with baking parchment, and bake in the middle of the oven for 15-20 minutes (this will depend on the thickness of your fish fillets).
  6. Serve immediately with wholemeal rice or couscous.
