- 4 medium raw beetroots (as many as desired)
- 4 carrots peeled
- 1 teaspoon whole grain mustard
- 1 dash maple syrup
- 4 tbsp extra virgin olive oil (or flaxseed oil)
- 1/2 orange juiced
- 1 small bunch flat leaf parsley
Instructions
- Wash carrots and beetroot and grate.
- Dress with olive or flaxseed oil, balsamic vinegar, some wholegrain mustard, orange juice and a dash of maple syrup.
