Carrot Dip

This carrot dip is a must for any snack table, a perfect accompaniment to our pitta chips, sweet potato falafels or buffalo cauliflower bites– as well as many more tasty treats! This recipe is from the Ammerdown retreat.

Ingredients list

 

Serves 6
  • 500 g cooked carrots
  • 50 ml olive oil
  • salt and pepper
  • 100 g pine nuts
  • 1 tbsp of cumin
  • 1 tsp of cinnamon
  • 2 garlic cloves
  • 1 tbsp of paprika
  • 2 tbsp of honey

Instructions

  1. Toss all of your ingredients together and place on a baking tray.
  2. Roast at 180°C for 20 minutes or until you see colour.
  3. Blend the ingredients in a food processor until you have a smooth mixture.
