Cashew ‘Cream Cheese’

Serves 1
  • 1 cup cashew nuts
  • 1 cup water
  • 1 lemon squeeze of juice
  • fresh herbs such as thyme, rosemary
  • nutritional yeast
  • chili powder optional
  • salt and pepper


  1. Soak cashews in water for about 8 hours
  2. Remove water, rinse and blend them with lemon juice till creamy (add more water if needed)
  3. Add your chosen herbs and spices, stir well.

This cream cheese can be refrigerated for up to 7 days.
