Chickpea cookie dough

Who would have thought you could create a tasty cookie dough from a can of chickpeas?! It is a great treat to make to satisfy your sweet tooth.

Ingredients List

Serves 1
  • 400 g canned chickpeas drained and rinsed
  • 1/4 cup pecan nut butter any nut butter of choice
  • 1 tsp vanilla extract
  • 3 tbsp oat flour
  • 2 tbsp maple syrup
  • 1/4 cup cacao nibs
  • 1/2 tsp salt

Instructions

  1. Add all the ingredients, except for the cacao nibs to a blender.
  2. Process until thick and a dough forms.
  3. Taste the dough and add more sweet ingredients if needed.
  4. Transform the dough into a large bowl and use a spatula to fold in the cacao nibs. 
  5. Keep in the fridge. 

For these cookies to be OMS friendly we suggest choosing a good quality nut butter without additional oils. Enjoy nut butters in small amounts, so perhaps don’t have too many cookies at once!
