Creamy Porridge with Fruit

Porridge is a really easy OMS Friendly breakfast which you can top with your favourite fruits, nuts, seeds and granola. Recipe kindly sent in by Linda

Ingredients List

 

Serves 1
  • 3 tablespoon rolled oats
  • 50 ml soy milk
  • 1 banana
  • 1-2 teaspoons lemon juice
  • seasonal fruit for topping
  • nuts for topping

Instructions

  1. In a saucepan, mix the oats and milk and bring to the boil 
  2. Add in the chopped banana and continue to stir until the porridge is as thick as you want. 
  3. Once it has reached the consistency you want, remove from heat and add stir through the lemon juice.
  4. Top the porridge with your favourite fresh fruit, nuts, seeds, dried fruit or granola. 

This porridge is really filling and will have you feeling content all morning. If you want to make this porridge a little lighter, try using rice milk instead of soy which is not so rich in protein and leaves you feeling less full.
