Fruit and Nut Energy Bites

Easy to make in a food processor, these little sweet treats keep for a couple of weeks in the refrigerator.

Time 15 minutes to prepare, 30 minutes to chill.

Ingredients List

 

Serves 32
  • 30 g rolled oats
  • 100 g cashew nuts
  • 80 g dried cranberries
  • 125 g dried apple pieces
  • 50 g crystallised ginger
  • ¼ tsp cinnamon
  • 1 tbsp cold pressed flaxseed oil
  • 2 tbsp cashew butter
  • pinch of salt

Instructions

(This recipe makes 32 energy bites)

  1. Put the oats, cashew nuts and dried cranberries into a food processor and pulse to a fine crumb. Reserve 4 tbsps in a shallow bowl.
  2. Add the rest of the ingredients to the bowl of the processor and blend everything together until it starts to clump.
  3. Using gloves or keeping hands wet with cold water, roll the mixture into small balls (about 15 g each).
  4. Roll each of the balls in the reserved crumb to coat.
  5. Place on parchment paper and chill in the fridge for 30 minutes to firm up.

Notes

  • Keep in an airtight container in the fridge for up to 2 weeks, if they last that long!
