Mandarin Sprout Salad

This vibrant salad is zingy and will make you want to never roast your Brussels sprouts ever again!

Ingredients List

 

Serves 2
  • 200 g Kale
  • 100 g Spinach
  • 200 g Brussel sprouts
  • 1 Red onion
  • 3 Mandarins or clementines, tangerines or satsumas
  • 1 Avocado
  • 100 g Walnuts
  • 1 Lemon
  • 1 tsp Maple syrup
  • 2 tbsp Extra virgin olive oil

Instructions

  1. Heat the oven to 200 C/ 390 F and spread the walnuts on a baking sheet and bake until lightly browned and fragrant, this should be around 8-10 mins. 
  2. Cut up the kale, sprouts, avocado and red onion into thin strips. You can use a mandolin to shave the sprouts if you have one, otherwise chop them very thinly.
  3. Supreme the mandarins into segments. 
  4. Zest the lemon into a bowl. 
  5. Either use a rolling pin to break up the walnuts or a food processor if you have one.
  6. Combine with the lemon zest.
  7. Mix the olive oil, maple syrup and lemon juice to emulsify and make a dressing.
  8. Pour over the kale, sprouts, avocado, red onions and walnuts.
