Mexican Corn on the Cob

A really easy, really tasty recipe building on the taste of corn. Great starter or side.

Ingredients List

Serves 2
  • 2 ears sweetcorn
  • 1 tbsp lime juice
  • 1/4 tsp cayenne pepper
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp sea salt

Instructions

  1. Shuck the corn ears if needed.
  2. Add unsalted cold water in pot, (salting the water makes the corn tough) and the ears of corn.
  3. Cover, and bring to the boil.
  4. Turn off the pot and leave for 5 mins. They will keep for another 10 mins without becoming tough if needed.
  5. Combine cayenne pepper,  lime juice and extra virgin olive oil and drizzle over the cooked corn to add flavour.
