Much-loved Chocolate Muffins

These delicious Overcoming MS-friendly chocolate muffins were a huge hit at a recent Circle meeting in LA that we just had to share the recipe.

Ingredients List

 

Serves 4
  • 120 g flour
  • 190 g brown sugar
  • 24 g cocoa powder
  • 2 g teaspoon baking soda
  • 2 g teaspoon salt
  • 2 tbsp extra virgin olive oil
  • 5 ml vanilla
  • 237 ml water
  • 1 tbsp apple cider vinegar
  • 2 tbsp apple sauce

Instructions

  1. Pre-heat the oven to 180 C (350 F).
  2. Add all ingredients aside from the apple cider vinegar in a bowl (apple cider vinegar will be added later).
  3. Mix ingredients together
  4. Briefly stir apple cider vinegar into the mixture (Do not over-mix as this will beat the air out of the mixture).
  5. Pour mixture into standard size muffin tins.
  6. Bake in oven for approximately 30 minutes.
