No-oil Dijon Dressing

This whisked dressing is great over a potato salad or as a side dish with grilled asparagus. It can also be used to add flavor to ingredients such as tofu, tempeh, mushrooms, or even steamed vegetables. Based on an original recipe kindly sent in by Jack McNulty.

Serves 1
  • 30 g dijon mustard
  • 80 g apricot paste or sweetener (agave or honey)
  • 1.5 tbsp shallot (minced)
  • 100 ml rice vinegar
  • 0.25 tsp black pepper (freshly ground)
  • 0.5 clove garlic (minced)
  • 2 tbsp tarragon (minced)
  • 2 tbsp nutritional yeast
  • 1 splash orange juice (optional)

Instructions

  1. Whisk together the Dijon mustard, fruit paste, shallot, vinegar, black pepper, garlic, tarragon and nutritional yeast.
  2. Thin slightly with a splash of orange juice if you think the dressing is too thick.
  3. (Tip: use a jar with a lid to make the dressing by combining everything in the jar, fastening the lid and vigorously shaking to create an emulsion).
