Ingredients List
Serves 2
- 1.5 cups pasta (farfalle is nice)
- 4 medium tomatoes
- 1 clove garlic (chopped)
- 1 small clutch fresh herbs (chives, parsley, basil, chopped)
- 1 shake sea salt (and freshly ground black pepper)
- 200 g smoked salmon (sliced or chunked)
Instructions
- Cook pasta.
- Chop tomatoes and cook in frying pan with garlic (no oil) until soupy.
- Add herbs and season with salt and pepper.
- Drain pasta, reserving 1 cup of cooking water.
- Toss pasta with tomato sauce adding enough of the reserved water to loosen pasta and sauce.
- Stir through smoked salmon. Serve and enjoy!
