This spicy pasta dish is easy, without too many ingredients, but still full of flavour. If you like a Nandos then you might just like this.
Preheat oven to 180°C/356°F.
Line an oven tray. Add 2 chopped red peppers, a quartered red onion and a halved lemon (cut side down) to a tray. Roast in oven for 40 minutes.
Add onion and peppers to a blender with the pulp of the roast lemon, 1 1⁄2 tablespoons of red wine vinegar, 2 garlic cloves, 1 red chilli, a heaped teaspoon of oregano, a heaped teaspoon of smoked paprika, salt, pepper, olive oil. Blitz until smooth.
Slice and dry fry peppers for the top, and tofu if you are adding.
Cook pasta following pack instructions.
Drain pasta, reserve some of the water.
Add pasta water to the sauce to loosen and make creamy.
Mix pasta and sauce. Top with fried peppers (and tofu if you want) and then add coriander.
Note you will need a blender/handblender! Add tofu for protein if you wish!
