Prawn Pad Thai

This Thai classic serves four people and is guaranteed to wow your guests. Shout out to Gillian for this mouth-watering recipe

Ingredients List

Serves 4
  • 250 g rice noodles
  • 1 red pepper diced
  • 200 g snow peas fresh or frozen
  • 20 king prawns Cooked and peeled
  • 120 ml Pad Thai sauce

Instructions

  1. Soak the noodles according to the instructions on the packet.
  2. In a large non-stick wok or frying pan, sauté the red pepper and snow peas for 2 minutes, using a little water if necessary to prevent sticking.
  3. Add the Pad Thai sauce and the prawns and warm through.
  4. Add the drained rice noodles and mix well to combine.
  5. Serve in warmed bowls.

Optional extras:

  • Add one finely chopped red onion in step 2.
  • Delicious topped with fresh coriander, finely sliced spring onions, and toasted cashew nuts.

Please note: pad thai suace is considered to be ready-processed and would fall into the ‘amber’ category i.e. may be used little and not too often.
