Pulled Jackfruit

Using jackfruit is a clever way of making an OMS friendly 'pulled' meat substitute. This pulled jackfruit is simple to make and tastes delicious.

Ingredients List

Serves 2
  • 1 jackfruit tin
  • 2 garlic cloves diced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp coriander
  • 1 tsp tomato puree
  • hot sauce - a dash of
  • 2-3 tbsp soy sauce can use tamari if GF
  • 60 ml vegetable stock
  • 1 tbsp honey or maple syrup
  • salt and pepper
  • extra virgin olive oil

Instructions

  1. Drain the jackfruit and then rinse in a sieve or colander.
  2. Shred jackfruit using your hands or a fork. I cut the ends off to make this easier. 

  3. Heat medium size pan on a medium heat

  4. Dry fry jackfruit with garlic for 5 mins

  5. Add dry ingredients another 5 mins (cumin, paprika and coriander) 

  6. Add tomato paste, hot sauce, honey and stock – stir  – heat for another 5 mins or until the liquid has fried off. 

  7. Leave to cool for a couple of minutes before serving. 

Serve in tacos or a big floury bap (roll). Sauted onions are a nice addition.
