Ingredients List
Serves 3
- 0.5 medium pumpkin or winter squash (peeled and chopped)
- 2 medium onions ( (diced)
- 2 cloves garlic (crushed)
- 3 lt vegetable stock
- 1 tin chopped tomatoes
- 2 tbsp tomato paste (add more to taste)
- 0.5 tsp nutmeg
- 1 tsp curry powder
- 0.5 tsp black pepper freshly ground (and tamari, or salt, to taste)
Instructions
- Take pumpkin, onions, garlic and stock and place into a saucepan.
- Bring to the boil, then simmer until pumpkin is tender.
- Cool and mash or blend (optional), then add the rest of the ingredients, reheat gently and serve.
- Add a little soy milk at this stage, if desired.
