Quinoa and Rocket Salad

Ingredients List

Serves 1
  • 2 cups quinoa cooked and cooled
  • cups arugula 4-5
  • 1/4 red onion
  • 1/3 cup cranberries dried and sweetened such as Craisins
  • 1/2 apples chopped
  • 1/2 cup orange juice


  1. Finely chop the red onion and apple 
  2. Mix all the ingredients together in a large bowl, serve and enjoy!
