- 1 cup pumpkin (roasted)
- 1 medium red onion (finely chopped)
- 1 tbsp extra virgin olive oil
- 1 clove garlic (crushed)
- 1 tbsp tamari
- 1 tbsp spring onion (chopped)
Instructions
- Cut in half and roast the pumpkin or squash for 30 – 40 mins.
- Chop red onion and spring onion, and crush the garlic.
- Combine olive oil, garlic, tamari, red onion and spring onion with the scooped out roast pumpkin flesh and blend.
- Serve on rice cracker thins or corn thin.
- You can substitute the tamari for soy sauce
