Roast Pumpkin Spread

Flavourful Autumn spread recipe made from pumpkin or butternut squash.

Ingredients List

Serves 4
  • 1 cup pumpkin (roasted)
  • 1 medium red onion (finely chopped)
  • 1 tbsp extra virgin olive oil
  • 1 clove garlic (crushed)
  • 1 tbsp tamari
  • 1 tbsp spring onion (chopped)

Instructions

  1. Cut in half and roast the pumpkin or squash for 30 – 40 mins. 
  2. Chop red onion and spring onion, and crush the garlic. 
  3. Combine olive oil, garlic, tamari, red onion and spring onion with the scooped out roast pumpkin flesh and blend.
  4. Serve on rice cracker thins or corn thin. 
  • You can substitute the tamari for soy sauce
