Serves 1
- 2 red pepper
- 1/2 butternut squash or 1 sweet potato
- 1 courgette
- 1 onion
- 4 garlic cloves
- 5 dried apricots or a small handful of raisins
- flaked almonds handful
- 1 chopped tomatoes can
- 1 tomato passata jar
- 1 canned chickpeas
- 1 tsp ground ginger
- 1/2 tsp cinnamon
- 1 tbsp ground cumin
- 1 tbsp ground coriander
- 1 vegetable stock cube
Instructions
- Dry fry the onion in a non stick pan for a couple of minutes
- Add a little water, garlic and spices to form a paste with the onion and fry for 1 minute
- Add the butternut squash (or sweet potato) and pepper. Pour in enough water to cover the veg and add the stock cube.
- Once soft, add the chopped tomatoes and passata, courgette and dried fruit
- Simmer for 20 minutes while you make some couscous, polenta (gf) or rice
- Add flaked almonds to the tagine and stir through
- Serve with more flaked almonds, fresh coriander and a spoonful of yogurt
