Roasted Vegetable Tagine

A traditional Moroccan dish, this quick meal is packed with tasty veg and chickpeas. Thanks to Rowan for sending in this recipe.

Ingredients List

Serves 1
  • 2 red pepper
  • 1/2 butternut squash or 1 sweet potato
  • 1 courgette
  • 1 onion
  • 4 garlic cloves
  • 5 dried apricots or a small handful of raisins
  • flaked almonds handful
  • 1 chopped tomatoes can
  • 1 tomato passata jar
  • 1 canned chickpeas
  • 1 tsp ground ginger
  • 1/2 tsp cinnamon
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 vegetable stock cube


  1. Dry fry the onion in a non stick pan for a couple of minutes
  2. Add a little water, garlic and spices to form a paste with the onion and fry for 1 minute
  3. Add the butternut squash (or sweet potato) and pepper. Pour in enough water to cover the veg and add the stock cube. 
  4. Once soft, add the chopped tomatoes and passata, courgette and dried fruit
  5. Simmer for 20 minutes while you make some couscous, polenta (gf) or rice
  6. Add flaked almonds to the tagine and stir through
  7. Serve with more flaked almonds, fresh coriander and a spoonful of yogurt
