Sesame Sockeye Salmon and Noodles

This quick and easy dish is packed with flavour and makes a great mid-week meal. Recipe kindly sent in by Ellen.

Ingredients List

Serves 2
  • 2 sockeye salmon fillet
  • 2 tsp sweet chilli sauce
  • 2 tbsp sesame seeds
  • 1 tbsp tamari
  • 1 tsp soy sauce
  • 1 tsp fish sauce
  • 1 celery
  • 1 red chilli
  • 1 yellow pepper
  • 1 carrot
  • handful of sugar snap peas
  • 2 portions udon noodles check ingredients, some brands contain sunflower oil

Instructions

  1. Heat the oven to 180 Celsius
  2. Put the salmon on a baking tray, spoon a teaspoon of the sweet chilli sauce over the top of each fillet and bake for 10-15 minutes until cooked. 
  3. While the salmon is cooking, toast the sesame seeds in a dry frying pan, then set aside. 
  4. Finely shred the vegetables and stir fry, using water if they stick for 3-5 minutes. Add noodles, tamari, soy and fish sauces. 
  5. Cook for 2-3 minutes until all heated through.
  6. Serve noodles with salmon on top and sprinkle with sesame seeds
