Ingredients List

- 400 g spaghetti
- 2 tsp lemon rind (finely grated)
- 0.25 cup lemon juice
- 2 tbsp extra virgin olive oil (or flaxseed oil)
- 1 medium avocado (diced)
- 200 g salmon (smoked or tinned, flaked)
Instructions
- In a small bowl mix together the chives, parsley, lemon rind and juice and oil.
- Cook the spaghetti in a large pot of boiling salted water, until al dente, and drain well.
- Return the pasta to the pot and stir in the sauce ingredients.
- Add the avocado and salmon and mix gently.
- Season to taste and serve.
- You can also add other ingredients like rocket, sun-dried tomatoes, olives, etc.
