Spicy Prawn Spaghetti

This is a seafood dish full of taste and flavour, the trio of tomato, garlic and chilli are the stars of the show.

Ingredients List

Serves 2
  • 150 g king prawns (if using frozen prawns, defrost)
  • 400 g chopped tomatoes (chopped)
  • 150 g spaghetti wholegrain preferably
  • 1 tablespoon tomato puree
  • 1 red chilli chopped
  • 3 shallots chopped
  • 2 garlic cloves
  • 1 teaspoon dried oregano
  • 1 teaspoon basil dried

Instructions

  1. Dry fry the chopped red chilli, shallots and garlic in a non stick frying pan.
  2. Once the shallots are soft, add the tomato puree and chopped tomatoes and dried herbs. 
  3. Bring pot of salted water to the boil and add spaghetti.
  4. Reduce down (should take about 10 minutes).
  5. Add prawns and cook for a further 2-6 minutes (depending on size) or until prawns turn pink.
  6. Combine sauce with the cooked, drained spaghetti and season with plenty of salt and pepper.
