- 1 cup cashew nuts

- 1 lemon squeeze of juice
- fresh herbs such as thyme, rosemary
- nutritional yeast
- chili powder optional
- salt and pepper

- Soak cashews in water for about 8 hours
- Remove water, rinse and blend them with lemon juice till creamy (add more water if needed)
- Add your chosen herbs and spices, stir well.
This cream cheese can be refrigerated for up to 7 days.
