- 300g can chickpeas (drained)
- 1 cup sun-dried tomatoes (drained)
- 1-2 cloves garlic (crushed or chopped)
- 0.5 cup fresh herbs (firmly packed)
- 2 medium lemons (or limes, use the juice only)
- 0.25 cup extra virgin olive oil (can increase to half cup)

- Whizz until smooth and red, adjust seasonings.
- Serve with vegetable sticks or saturated fat free biscuits (e.g. Salada Light).
Add salt and pepper to taste.
• Use fresh herbs of your choice e.g. parsley or coriander .
