
Kidney Bean Curry
Main Meal
This comforting meal is simple to make but extremely tasty. If you prefer you're food on the spicy side, add more chillies!
Ingredients List for people
- 1 red chilli finely chopped
- 4 garlic cloves finely chopped
- fresh ginger 4cm piece, finely chopped
- 250 ml dairy-free cream
- 4 tablespoons tomato puree
- 2 can red kidney beans
- 1 cup basmati rice
Instructions
- Finely chop the chilli, garlic and ginger.
- Dry fry all three, adding a little water if needed
- Once they have colour and smell fragrant, add the tomato puree, creating a paste.
- Slowly pour in cream, adding a little at a time
- Add the kidney beans, if it seems a little dry, add more cream or tomato puree
- Taste and add salt and pepper
- Serve with rice

This did not float my boat at all when I was cooking it, thought it looked quite plain and tasteless despite what was going in but I was wrong. This tasted so much better than it looked and is one of my favourites so far.

Hi there, this looks great! Can anyone tell me if they're finding oil free cream? All the non dairy versions I find seem to have a lot of rapeseed or sunflower oil in them, which I thought were out of bounds especially when heated? Any suggestion (or correction) very welcome! Thanks

Hey I was wondering - where did you get dairy free cream from for this recipe.
Try oat or soya cream. Most supermarkets should sell it.
