  1. Mash avocado with lemon juice.
  2. Deseed and chop the cucumber then dice the red pepper.
  3. Combine the avocado, cucumber, mint and pepper. 
  4. Spread the natural almond butter on cracker thins first and then top with the rest of the ingredients.
