Ingredients List



  1. Preheat the oven to 200 C / 400 F

  2. Cook your sweet potatoes in the oven for at least an hour or until soft. 

  3. Meanwhile, heat a large skillet. Add the onion and pepper and saute until tender, with a dash of water for about 5 minutes.

  4. Add the sweetcorn, cooked quinoa, black beans and spices and cook 2 - 3 more minutes.

  5. When the sweet potatoes are tender, remove from the oven.

  6. Slice in half and fill with your quinoa mixture.

  7. Serve with guacamole and salad.
