- 1 sweet potato
- 1/2 red onion finely chopped
- 1/2 red pepper finely chopped
- 1/4 cup sweetcorn
- 1/4 cup quinoa cooked in boiling water for about 20 minutes
- 1/2 cup black beans
- 1/2 tbsp chili powder
- 1/2 tsp cumin
- 1/4 tsp smoked paprika

Preheat the oven to 200 C / 400 F

Cook your sweet potatoes in the oven for at least an hour or until soft.

Meanwhile, heat a large skillet. Add the onion and pepper and saute until tender, with a dash of water for about 5 minutes.

Add the sweetcorn, cooked quinoa, black beans and spices and cook 2 - 3 more minutes.

When the sweet potatoes are tender, remove from the oven.

Slice in half and fill with your quinoa mixture.

Serve with guacamole and salad.
