A really quick and simple pasta salad that is great for lunch on the go. The olives add a lovely salty taste and the dressing is a great way of incorporating flaxseed oil into a meal.

Ingredients List for people
  1. Boil your pasta of choice according to the packet instructions.
  2. Prepare the tomatoes and olives by chopping them in half.
  3. Cut your pepper up into bite size chunks.
  4. In a bowl, whisk together the olive oil, flaxseed oil, lemon juice and red wine vinegar. Add the garlic powder and chilli flakes. 
  5. Drain your pasta under cold water and then in a large bowl, combine the pasta, chopped veg and dressing.

So we can eat Tomatoes? I had just recently learned that due to their lectin content they contribute to leaky gut and some doctors say to avoid them. Which is a similar reason we avoid gluten, right? I hope its not the case as tomatoes have been a huge part of my plant based diet
