Banana Nut Muffins

These banana nut muffins can be a tasty treat at breakfast or a delicious dessert, and have a little ginger kick to get you going! This recipe is from our Ammerdown retreat.

Ingredients list

 

Serves 12
  • 2 ripe bananas
  • 3 tbsp of olive oil
  • 190 ml oat or almond milk
  • 250 g sugar
  • 250 g wholemeal flour
  • 250 g plain flour
  • 1 tsp of grated ginger
  • 1 tsp of ground cinnamon
  • 1 tsp of salt
  • tsp of baking powder
  • 2 grated apples
  • 70 g chopped walnuts

Instructions

  1. Put all of the ingredients, apart from the walnuts and apples, into a food processor and blend until combined.
  2. Mix in by hand the grated apple and chopped walnuts.
  3. Portion into muffin cases or trays.
  4. Bake at 175°C for 30-40 minutes or until you can cleanly pierce the muffin with a knife.
