Overnight Millet Breakfast Pot

A variation on overnight oats, using millet flakes (which are gluten-free) and nutritious hemp seeds. An easy recipe to make ahead and/or to scale up for more people.

Time 10 minutes to prepare, plus resting overnight in the fridge.

Ingredients List

 

Serves 1
  • 8 heaped tbsp millet flakes
  • 1 heaped tbsp hemp seeds
  • 1 medjool date finely chopped
  • 100 ml almond milk
  • 40 g plain plant-based yoghurt

Instructions

  1. Place all the ingredients up the the plant-based yoghurt into a bowl and stir until well combined.
  2. Place in the fridge overnight to rest.
  3. When ready to eat, top with more chopped medjool date and pink grapefruit segments.
  4. Enjoy!

Notes

  • Try using chia seeds instead of hemp seeds.
  • Swap the salmon milk for your favourite plant-based milk
  • Try serving with different fruits e.g. raspberries or mango.
  • Keep for up to 3 days in the fridge, for a readymade breakfast.
