- Slice the veg into thin slices. You can cut pepper into thirds, the aubergine towards the wider end. The courgette (zucchini) will need to be a longer strip. They should be around the diameter of the beef tomato.
- Cook on a George Foreman grill or a hot griddle pan for around 5-7 minutes .

- Stack the grilled veg on your plate and drizzle over the pesto.
