Grilled Vegetable Stack with Pesto


Use your favourite seasonal vegetables to create this easy starter and top with a drizzle of fresh pesto. Recipe for pesto can be found below.

  1. Slice the veg into thin slices. You can cut pepper into thirds, the aubergine towards the wider end. The courgette (zucchini) will need to be a longer strip. They should be around the diameter of the beef tomato.
  2. Cook on a George Foreman grill or a hot griddle pan for around 5-7 minutes .
  3. Make rocket pesto, find the recipe below.
  4. Stack the grilled veg on your plate and drizzle over the pesto.
